As Los Angeles prepares for the year ahead, the city is off to a strong start, adding a few new culinary gems to its ever-growing list of premier dining destinations.<\/p>\n<p>Before moving on to the new year, though, we can\u2019t forget <a href=\"https:\/\/observer.com\/list\/los-angeles-best-restaurant-openings-december-2025\/\">the gifts that December bestowed upon us<\/a>. <a target=\"_blank\" rel=\"noopener\" href=\"https:\/\/www.hermonsla.com\/\">Hermon\u2019s<\/a> made waves at the end of the year with its innovative American fare and tiny \u2018tini\u2019s, quickly becoming one of the city\u2019s most difficult reservations to make. Echo Park\u2019s Henrietta also opened its doors for lunch and dinner, while R\u00e9galade set out to redefine what French fare means to Angelenos on West 3rd Street. <a href=\"https:\/\/observer.com\/list\/best-restaurants-elevated-dining-downtown-los-angeles\/\">DTLA\u2019s The Row<\/a> welcomed Kar Son, a sleek Chinese eatery that appreciates tradition.<\/p>\n<p>This month, <a href=\"https:\/\/observer.com\/2025\/08\/cheesesteaks-by-matu-los-angeles-pasadena-calabasas-opening\/\">Mat\u016b is bringing its iconic cheesesteak sandwiches to Pasadena<\/a>, and the recently revamped Cameo Beverly Hills is opening a chic, Peruvian-Japanese Nikkei restaurant called <a href=\"https:\/\/observer.com\/company\/zampo\/\" title=\"Zampo\" class=\"company-link\">Zampo<\/a>. Following the opening of her trendy diner, Max &amp; Helen\u2019s, chef <a href=\"https:\/\/observer.com\/person\/nancy-silverton\/\" title=\"Nancy Silverton\" class=\"company-link\">Nancy Silverton<\/a> is staying busy with the launch of Korean-Italian <a href=\"https:\/\/observer.com\/company\/lapaba\/\" title=\"Lapaba\" class=\"company-link\">Lapaba<\/a>, and the former Amour space on Beverly Boulevard has officially been replaced with a sultry new lounge called <a href=\"https:\/\/observer.com\/company\/scarlett\/\" title=\"Scarlett\" class=\"company-link\">Scarlett<\/a>.
